Leidenfrost effect |

The liquid nitrogen evaporates, keeping the droplets suspended above the table and inhibiting boiling. The same sight (known as the Leidenfrost effect) can be seen when water droplets are suspended above a hot metal plate. Note: if the liquid nitrogen touches the table (in a rough spot) it boils and disappears. |
